Born in Lyon, I grew up in the kitchens that taught me to respect product first, which led me from culinary school at 19 to training under French Master Chefs at a two-Michelin-starred restaurant in Vienne. I came to Charleston in 2006, eventually becoming the youngest-ever US member of the French Culinary Academy and Master Chefs of France, honors that keep me grounded in classic technique while I cook for my community every day. After a decade cooking for historic Charleston properties and championing sustainable, local seafood, I opened NICO, Bistronomy by Nico, Laura, and Kersey House as neighborhood places where European roots, Lowcountry waters, and my Italian family table all meet on the plate. Every menu I write still starts the same way: what’s fresh, what’s local, and what story can we tell together around the table tonight.
