Chef & Owner

Born in Lyon, I grew up in the kitchens that taught me to respect product first, which led me from culinary school at 19 to training under French Master Chefs at a two-Michelin-starred restaurant in Vienne. I came to Charleston in 2006, eventually becoming the youngest-ever US member of the French Culinary Academy and Master Chefs of France, honors that keep me grounded in classic technique while I cook for my community every day. After a decade cooking for historic Charleston properties and championing sustainable, local seafood, I opened NICO, Bistronomy by Nico, Laura, and Kersey House as neighborhood places where European roots, Lowcountry waters, and my Italian family table all meet on the plate. Every menu I write still starts the same way: what’s fresh, what’s local, and what story can we tell together around the table tonight.

Good first meal. We were thinking this was going to be more like a traditional takeout (ready to eat). Will continue with the program with only concern that 2 of our party can’t eat shellfish.

A delicious dinner prepared by you! The Shrimp Ratatouille—easy to reheat, timed perfectly. The Melon Salad was tasty though I thought honeydew or musk. The water-y-melon made greens limp though good

The Petit Farci Niçoise was delicious, pairing well with the Arugula Salad, which was tasty by itself. The accompanying French Bread Loaf is always excellent. We always enjoy our at-home Nico dinner!
